One Fish, Two Fish, Red Fish, Blue Fish; A Day in Chicago!

As the More is More Mom®, I’m all about……more time with my favorite gal! One of the best things about high school is meeting new people and developing lifelong friendships. While Amanda’s met a gaggle of darling girls at St. Feels Right for Her, she is particularly close to two girls that are twin sisters (who hasn’t dreamt about how fun it would be to be a twin?). These three are practically inseparable. When the girls hatched a plan to have a mother/daughter day in the city, their mom and I jumped at the chance!

I am a hunter, gatherer and self-confessed hoarder. Shopping has always been my obsession! When I was a teenager about town, I was always headed to Marshall Field’s on State Street, the Century Mall and Water Tower Place. Amanda and her pals are far more curious, noble and serious.

All bundled up, we jumped on the Metra, destination; Ogilvie Transportation Center. While I love the quaint charm of living in the suburbs (we live in a bubble, within a bubble and it is awesome), I’m addicted to Chicago’s energy. It’s always buzzing! No sooner were we off the train then flying down to the concourse to buy our daily bus passes at the CVS/Pharmacy. Such a deal!

On State Street we hopped on the 146 which took us directly to the Museum Campus. The girls had a hankering to see the fish at the Shedd Aquarium.

One Fish, Two Fish, Red Fish Blue Fish (Dr. Suess rocks!); we got up close and personal with beautiful (and not so beautiful) fish species from oceans, local waters, islands, lakes and rivers. My favorites were the seahorses. We decided, however, that our visit wouldn’t be complete without the 4-D experience and taking in a show at the Amphitheater.

For the 4-D experience, we joined every toddler in the Chicago-land area for a viewing of Happy Feet. While we thoroughly enjoyed the sensory experiences; water mists, wind, air blasts, snow, bubbles, steam, leg ticklers, seat vibration and enhanced lighting, many of our little friends were terrified to tears. On the other hand, everyone enjoyed the soaring dolphins, dancing belugas and the adorable sea lion at the Aquatic Show.

With all of this learning, we sure worked up an appetite. Amanda couldn’t wait to introduce her friends to our favorite place for lunch; Food Life at Water Tower. Back on the bus, we were there in no time. Public transportation is a beautiful thing.

My Amanda is frequently not her mother’s daughter. Rather than wander around the mall, these girls only had eyes for the Skydeck at the Sear Tower (okay….Willis Tower. Old habits die hard). They were dying to step out onto….The Ledge!

With absolutely no one in line, our visit was meant to be. We took the elevator up 1,353 feet (and the Merry Go Round gives me the willies). The closer we got to the window, the more I felt faint. When we made it to The Ledge (a glass box that extends 4.3 feet from the actual ground of the Skydeck), I had heart palpitations. Above, below and from side to side you are surrounded by glass. My advice; don’t look down.

After much giggling and nudging, all three girls made their way out onto the ledge. They pressed their faces up against the glass, lounged on the glass bottom floor and jumped up and down (tempting fate). While they loved it, I had never been so happy to step foot back onto Jackson Blvd in my life!

Friends, fish, food and fear; I can’t think of a better way to spend a day in Chicago!

More palling around, more time with Amanda, more days in the city, more memory making…….

State & Randolph: Walgreens Grand Opening Party!


As the More is More Mom®, I’m all about…..more fabulous grand openings! This week, I was so excited to be a guest at the ribbon cutting ceremony for the brand new Walgreens at the corner of State and Randolph in Chicago. Visiting the city always makes me wax nostalgic; I am a city girl after all. When I was a kid, we would take the Red-line downtown to shop on State Street. It really is a great street. There was Marshall Fields, Carson Pirie Scott, Charles A. Stevens and Walgreens.


At three in the afternoon, I joined my fellow bloggers from Collective Bias for a guided tour. While Walgreens can always be counted on for a fine shopping experience, this new store really is fantastic. Walking in the door was like a wonderland! Who would ever expect to find a fresh sushi bar at Walgreens, but there it was. Beautiful seafood, rice and vegetables wrapped in seaweed; all prepared for the shopper on the go. The selection of upscale delicacies was plentiful; wraps and sandwiches, salads and desserts. The red velvet cake looked absolutely Heavenly!

There was a juice bar, over flowing with fresh fruits and vegetables. For those of us chocoholics, Walgreens was kind enough to bring back the original chocolate malt that they served at their soda fountain at the turn of the century. There’s just something special about tradition.


The fun continued at the frozen yogurt bar, with all of the toppings, and of course at the coffee bar. One of the things I really loved was the inclusion of Chicago vendors like Eli’s Cheesecake. Walgreens even teamed up with a local coffee maker to develop a custom coffee blend called State & Randolph.

However, my favorite feature was the wine and spirits shop. In particular, the virtual bartender concierge was extremely entertaining. All you have to do is punch in the flavors you have a hankering for, and out spits the recipe. How cool is that? They even had a generous selection of cheeses and sausages, which would be perfect to snag on your way home from work or as you head over to enjoy a concert in Millennium Park.

The best part of the night was yet to come. While we were touring the pharmacy department, we met the delightful twin sisters, Iris and Frances, from the Walgreens flu shot commercials. They were adorable! We met the beautiful Gabrielle Union, but my Amanda was much more impressed with the real life Red M&M. My evening was complete with my brush with greatness. As Mayor Rahm Emanuel was shaking hands, meeting and greeting, he paused, turned to me and said, “Nice necklace.” First Donny Osmond, now Mayor Emmanuel. I should play the lottery.

Delicious Easter Recipes and a Beautiful Tablescape….

As the More is More Mom®, I’m all about……..more Easter celebrations! What better way to welcome Peter Cottontail, hopping down the bunny trail, than with a delicious luncheon? One of my family’s favorite Easter traditions is enjoying a beautiful rack of lamb. Who knew that my people, who can be super picky and particular, would grow to appreciate such a fine culinary experience?

A fabulous meal deserves an over the top tablescape, and the centerpiece should absolutely set the tone. As a collector of all things interesting and beautiful, I decided that my bunny rabbit weathervane (vintage Target garden department) should take center stage. What I love about it is that it has height, character and dimension. To ground the weathervane, I found squares of artificial grass and I placed six of them together to create a bed. I have an affinity for rabbits, so to fill in some of the vertical space I dug out three moss covered bunnies from my collection of props. Because more of everything is always better, I scattered large colorful eggs amongst the bunnies and grass to create a beautiful and lively centerpiece.


To echo the garden theme, I chose a green square topper embellished with cabbage roses. The floral topper is another great source of inspiration. One possibility would be to fill individual bud vases at each place setting with a small mound of roses. That would actually be a beautiful party favor for your guests to take home. Another idea to draw from the floral topper would be to carry that theme into other parts of your home. A gorgeous bouquet would be lovely in your foyer, living room, kitchen or powder room. Such attention to detail is what makes our homes especially well appointed. Whether for your own home or a thoughtful gift, a beautiful source for flower delivery  at home is Serenata Flowers.

As we continue setting the table, my blue tablecloth highlights the blue flowers in the topper. Pink hydrangea placemats are topped with silver hobnail trim chargers. While a plain white dinner plate can be ho-hum boring, my Lenox scalloped edge plates, embossed with butterflies, vines and flowers are a total go to favorite. Polka dot salad plates dance with all of the colors in my topper and pink napkins with white Swiss dots compliment my tablescape. My favorite part of the place setting is the white bunny rabbit napkin rings. They are in fact the piece that started my creating a beautiful home obsession 21 years ago. I found six of them at Marshall Fields on State Street on extreme clearance for $.69 a piece…….

I find that entertaining is so much easier when you choose recipes that can largely be prepared ahead of time. With this menu, all I needed to do was pre-heat the ovens, pop in the potatoes and casserole, toss the salad and sear the lamb before it went in the oven for a mere 20 minutes. Super simple!


Fresh Herb Marinated Rack of Lamb with Vinaigrette:

This recipe is good for 4 racks of lamb, or 32 ribs. I think it’s safe to estimate 3-4 per person, though the left-over’s are to die for.

For the lamb:

¼ cup fresh mint chopped

¼ cup fresh basil chopped

¼ cup green onions chopped

2 Tbsp fresh oregano chopped

2 Tbsp balsamic vinegar

3 Tbsp olive oil

4 racks of lamb

In a small bowl, combine;



Green onions


Balsamic vinegar

Olive oil

Line a baking dish with aluminum foil

Generously rub mixture all over the lamb

Cover and chill overnight

Pre-heat oven to 375°

In a large skillet, heat 2 Tbsp olive oil

In batches, sear lamb and place back in the baking dish

Cook for approximately 15-20 minutes, or until an instant read thermometer reaches 145°

Remove from the oven and place on a cutting board

Tent with foil

Slice and serve with vinaigrette


I make the vinaigrette the night before, only I hold off on adding the tomatoes until the last minute.

1 ¼ cups olive oil

¾ cup fresh chopped mint

¾ cup fresh chopped basil

10 Tbsp red wine vinegar

2 ½ Tbsp fresh chopped oregano

4 Tbsp Dijon mustard

2 tsp sugar

1 tsp salt

1 cup chopped tomatoes (I wrap in a paper-towel and store overnight in a small Zip-loc baggie)

In a small bowl, combine all ingredients, cover and store in the refrigerator overnight.

Bring to room temperature before serving

Creamy Do Ahead Mashed Potatoes:

These are my very favorite holiday potatoes because they are creamy goodness minus the messy clean up after dinner.

In a large bowl, place;

1 package of cream cheese

1 stick of butter

½ cup of chopped green onions or chives

Peel 5 lbs of potatoes

Chop into 1-2” cubes

Boil until fork tender

Drain and pour into bowl with cream cheese, butter and green onions

Using a hand mixer, beat until nice and creamy

Butter a 13×9 baking dish

Pour in the potato mixture

Refrigerate overnight

Pre-heat oven to 350°

Cook for approximately 1- 1 ½ hours, until just golden

Allow to set for about 15 minutes and serve

My Chicago is…. Marshall Field’s on State Street!

As the More is More Mom®, I am all about….more Marshall Field’s on State Street! Okay, okay. I am actually aware that it’s now called Macy’s, which is fine, but it will always be Marshall Fields to me. You have to understand, I am a Chicago girl. I grew up four blocks from the Friendly Confines. The Mayors’ Daley, the first and the second, are both my mayors. I like my Italian from Taylor Street. I stand on tradition…..


Last week I had an appointment in the city, and I had a few extra moments for reminiscing about my childhood. Back in the olden days, my brother and I would take the train downtown and meet my mom. We would head to her office, go to a museum or visit my favorite place in the entire world….Marshall Field’s on State Street.

There is nothing like emerging through the revolving doors into the sweet smell of the perfume and cosmetics department! Counter after counter full of potential and possibility; the opportunity to become anything you can imagine. A girl can be sporty, beautiful, glamorous, sexy or successful. Pretty powerful stuff for a little make-up and olfactory.


The State Street flagship store is the 8th Wonder of the World. There are just so many attractions, floors, elevators and escalators. If you can remember that Wabash is the East, State Street is to the West, Washington Street is to the South and Randolph Street is to the North, you’ll never get lost.

One of the very best parts of the Marshall Field’s shopping experience was, of course, the accoutrements… the green shopping bags, the heavy cardboard boxes with gold leaf trim and, naturally, the authentic Frango Mints.


While every day was a happy day at Marshall Field’s, Christmas was an especially magical time. Every year we would make the pilgrimage to delight in the Christmas windows, visit Santa Claus in the toy department, dine with the Christmas Fairies in the Walnut Room and select a commemorative ornament from the Trim -a-Tree Department. Until one day when my brother and I completely dwarfed Santa, poor thing. It was time to move on…

Once I had children on my own, it was time to revive the time honored traditions. Gone were the lengthy lines at the Walnut Room, they now have a sophisticated beeper system. You take a number to see Santa and the ornaments remain happy and plentiful.

More and more, I am learning that you can go home again, and you should, because it is a pretty nice visit. More shopping (!), more possibilities, more family traditions…
