As the More is More Mom®, I’m all about….bringing more tasty morsels to Mom’s Night Out! It seemed when the kids were little that we moms could not get out of the house fast enough. We played BUNCO, attended Pampered Chef, Southern Living and Silpada jewelry parties, and met for cocktails after curriculum night at school. Once the kids got older, those days were a thing of the past, replaced by homework, lessons and sports.
So, imagine my delight when I was invited to a good, old fashioned, Mom’s Night Out! It was a gathering of Our Lady of Perpetual Donations moms with teens who attend St. Feels Right for Her High. I love nothing better than an old home week……
What goes better with wine and conversation than Homemade, Creamy Spinach and Artichoke Dip? As a guest, whenever I bring a dish to pass at a party, I always buy new serving pieces as my gift to the hostess. In this case, I found a great red crock and a beautiful bowl for the pita chips. The best thing was this recipe couldn’t be quicker and easier.
Homemade, Creamy Spinach and Artichoke Dip:
Pre-heat oven to 425°
In a large bowl, combine;
1 – 10-oz package of frozen chopped spinach, thawed and squeezed dry
1 – 6-oz can of artichoke hearts, drained and chopped
1 ½ cups grated Parmesan or Parmigiano Reggiano
1 cup mayonnaise
1 cup sour cream
Salt and pepper to taste
Transfer to a 1 quart baking dish
Sprinkle another ¼ – ½ cup of grated cheese over the top
Bake for approximately 25 minutes, until the cheese is lightly browned
Cool and serve with pita chips
