Pork Loin Wrapped in Prosciutto; Quick, Easy and Delicious!


As the More is More Mom®, I’m all about…….more pork (you know it’s the other white meat)! Lately, we’ve been dining on some of our family favorites; spaghetti and homemade meatballs, roasted chicken with a tasty Dijon sauce, steak sandwiches with grilled romaine and, of course, nachos. Last night, however, I decided it was time to try something new.

 

It’s funny, with Nick being away at school, I figured we’d have nothing but free time. Turns out, we’re as busy as ever. While some nights I only have time to whip up a quick dinner, I never want to skimp on taste. We loved this one and I hope your family loves it too.

 

Pork Loin Wrapped with Prosciutto

 

Roast;

Pork loin roast

10-12 slices prosciutto

Salt and pepper

1 Tbsp olive oil

 

Sauce;

1 Tbsp olive oil

1 Tbsp flour

4 garlic cloves, minced

2 tsp thyme (dried is perfectly fine, fresh is even better)

1 ¼ cups chicken broth

¼ cup lemon juice

To thicken the sauce, feel free to add a splash of heavy whipping cream

2 Tbsp chives

 

Pre-heat the oven to 450°

Sprinkle the roast with salt and pepper on both sides

Wrap the slices of prosciutto around tightly around the roast

In a skillet, heat the oil over medium-high heat

Brown the pork roast on all sides, for approximately 8 minutes in total

Turn off the heat, and transfer the roast to a rack on a foil lined, rimmed baking sheet (the foil is for easier clean up)

Roast in the oven for approximately 20-25 minutes, until an instant read thermometer registers 145-150°

Remove and tent

 

While the roast is resting, start the sauce

 

In the skillet with the pan drippings, heat;

 

1 Tbsp oil

 

For approximately a minute, stir in;

Flour

Garlic

Thyme

 

Add;

Chicken broth

Lemon juice

Stir for 3 minutes

 

To thicken the sauce, add a generous splash of cream

 

Stir in chives

 

Drizzle a heaping helping of sauce over slices of pork loin

 

I served the pork with a side of wild brown rice and a medley of fresh vegetables; carrots, snap peas and peppers. It was delicious!
