Grill it! And Serve It With A Side of Chutney!

As the More is More Mom®, I’m all about……more savoring the last few days of summer weather! While October screams hearty, good for the soul, comfort food, the warm weather inspired me to make one last summer dinner. It’s so tasty and tangy; I’m dreaming of Margarita’s by the pool (and I don’t even have a pool. Or a pool boy.)….

Lime and Curry Rubbed Brisket, served with a Home-made Melon and Cucumber Chutney:

In a medium size mixing bowl, combine;

2 cups of honeydew melon, chopped

1 cup seedless cucumber, peeled and chopped

½ cup red onion, chopped

4 Tbsp lime juice

¼ cup cilantro, chopped

2-3 tsp jalapeno pepper, seeded and chopped (unless you like the seeds)

½ tsp coriander

½ tsp cumin

1 tsp salt

½ tsp ground pepper (aren’t you surprised I didn’t say cracked black?)

The Chutney can be left out at room temperature until the brisket is ready to serve.

In a small mixing bowl, combine;

4 Tbsp lime juice

3 Tbsp vegetable oil

2 Tbsp curry power

½ tsp salt

½ tsp ground black pepper

3-4 lb brisket

Rub mixture into the steak.

Heat grill and reduce to medium heat.

Rub the grill rack with oil if you so desire.

Grill for 8-10 minutes total, turning once, for medium-rare.

Remove from the grill and allow to rest for a few minutes.

Thinly slice across the grain.

Serve with a heaping, helping of the home-made chutney.

On the side, I served a Texamti Brown Rice and our family favorite, broccoli.

More delicious dishes, more breaking bread together, more savoring the final days of Indian Summer…….
