Yummy, Yummy, Yummy, I’ve Got Love In My Tummy….


As the More is More Mom®, I am all about…..more love in your tummy! Halloween is my very favorite holiday of the year (most likely because we celebrate the entire month with candy). I have this recipe for Home Made Chocolate-Peanut Butter Cups, and it was a total must try because my Nick loves Reece’s Peanut Butter Cups. He once ate an entire carton, 36 packages in a box, from Costco in 9 days. That’s kind of gross. He’s lucky he didn’t slip into a diabetic coma (and he’s not a diabetic).

Home Made Chocolate-Peanut Butter Cups

You are seriously going to bite on this one. There are only four ingredients!

 

Line a muffin tin with 2 ½” baking cups.

 

You can use a double boiler, but truth be told, I really prefer to melt my chocolate in the microwave. It’s even easier.

You will need 2 – 11.5 oz bags of milk chocolate (I always like to have extra chips on hand in case of emergencies……). I think chips or chunks work just fine.

In the micro or double boiler, melt;

1 ½ bags of chocolate

Stir until nice and creamy

 

Dollop;

 1 heaping Tbsp of melted chocolate into each baking cup, filling about half way

Put in the refrigerator to set

In a small mixing bowl, with an electric mixer, cream;

 

6 Tbsp butter (left at room temperature)

Beat until the butter is soft and fluffy.

Add;

 

1 cup of peanut butter (I used Skippy Creamy because it’s safest with Nicks tree nut allergy)

¾ cup honey

 

Beat until nice and creamy

 

 

Transfer peanut butter mixture to a resealable baggie. I find it easiest to tuck the bag into a small bowl and stretch the lip of the baggie over the outside of the bowl. Simply pour the mixture in the bag and voila…no mess.

Snip off one corner and you’ve got yourself a pastry bag.

 

Remove chilled cups from the refrigerator.

With the pastry bag, fill each cup with the peanut butter mixture, about ¾ full.

 

Refrigerate until nicely chilled.

Right before you are ready for the finishing touches, melt the remaining chocolate by the method of your choice.

 

Spread the melted chocolate over the chilled peanut butter cup to create as smooth a surface as possible.

Refrigerate until completely hardened.

Remove the paper cups from the candies to uncover thick, luscious, beautiful Home Made Chocolate Peanut Cups (more than a cup, practically the size of a muffin!).
