There’s Always Room For Pie!

As the More is More Mom®, I’m all about….. more celebrating! This weekend I was planning on making a birthday dessert, but wanted to make something other than a classic chocolate cake. How about a chocolate pie? Because you know, there’s always room for pie….

Chocolate Cream Pie With Whipped Peanut Butter Topping:

In a small sauce pan, heat;

¾ cup heavy whipping cream

Until just boiling

In a blender, rough chop;

½ cup chopped, bittersweet chocolate

½ cup chopped, milk chocolate

2 Tbsp sugar

1 egg

2 tsp vanilla extract (always pure, never imitation)

Hot cream over chocolate mixture

Process until smooth

In a prepared 9” pie crust, Oreo or graham cracker;

Pour chocolate mixture

Whipped Peanut Butter Topping:

In a mixing bowl, combine;

1 cup heavy whipping cream

2 tsp vanilla extract (always pure, never imitation)

Whip until soft peaks form and refrigerate until ready to use

In another mixing bowl, with a hand mixer, combine;

4 oz cream cheese softened

½ cup peanut butter

Mix until nice and creamy

1 cup confectioner’s sugar

Combine with mixer, but know that it will be dry until…..

¼ cup heavy whipping cream

Until nice and smooth

Remove whipped cream from the fridge and fold into the peanut butter mixture.

With a hand mixer, whip until creamy smooth.

Chill peanut butter whipped cream until ready to use.

After the pie and whipped cream have time to set (approximately 3 hours), top the pie with the cream mixture. Refrigerate for at least 8 hours, but over night would be better.

More garnish is always important! Sprinkle Oreo crumbs or chocolate shavings over the top of the pie for an extra special touch.

More chocolate = more food and more food = more love!
